Hungarian Crêpes (Palacsinta) with Berrie
- 250 g all-purpose flour
- 2 eggs
- 500 ml milk
- 150 ml sparkling water
- 1 tablespoon sugar
- 1 teaspoon vanilla extract
- 1 pinch of salt
- 2 tablespoons melted butter
- Butter or oil for frying
For the Filling
- 200 g sour cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Fresh strawberries and berries
- Powdered sugar for serving
Instructions
- In a large bowl, whisk together the flour, eggs, milk, sparkling water, sugar, vanilla, and salt until smooth.
- Stir in the melted butter and let the batter rest for 15–20 minutes.
- Heat a lightly greased non-stick pan over medium heat.
- Pour in a small amount of batter and swirl the pan to make a very thin crêpe.
- Cook for about 1–2 minutes on each side until lightly golden.
- Repeat with the remaining batter.
- Mix the sour cream with powdered sugar and vanilla.
- Spread a little filling over each crêpe, add fresh berries, and roll it up.
- Arrange the crêpes on a plate and dust with powdered sugar.
- Serve warm or chilled with extra berries and sour cream.
