Hungarian Crêpes (Palacsinta) with erries

Hungarian Crêpes (Palacsinta) with Berrie

  • 250 g all-purpose flour
  • 2 eggs
  • 500 ml milk
  • 150 ml sparkling water
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • 2 tablespoons melted butter
  • Butter or oil for frying

For the Filling

  • 200 g sour cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh strawberries and berries
  • Powdered sugar for serving

Instructions

  1. In a large bowl, whisk together the flour, eggs, milk, sparkling water, sugar, vanilla, and salt until smooth.
  2. Stir in the melted butter and let the batter rest for 15–20 minutes.
  3. Heat a lightly greased non-stick pan over medium heat.
  4. Pour in a small amount of batter and swirl the pan to make a very thin crêpe.
  5. Cook for about 1–2 minutes on each side until lightly golden.
  6. Repeat with the remaining batter.
  7. Mix the sour cream with powdered sugar and vanilla.
  8. Spread a little filling over each crêpe, add fresh berries, and roll it up.
  9. Arrange the crêpes on a plate and dust with powdered sugar.
  10. Serve warm or chilled with extra berries and sour cream.

Hungarian name: Palacsinta 🇭🇺
